Food Runner/Cashier

Level One

  2. Accomplish assigned daily tasks and duties designated by management.
  3. Maintain control of station in peak periods.
  4. Maintain station cleanliness and organization throughout shift.
  5. Complete all assigned opening, running, and closing sidework.
  6. Ensure the proper placement and presentation of dinner orders on a tray
  7. Inspect all plates and product before it reaches the guest to ensure accuracy of order, garnish, proper temperature, and appealing presentation.
  8. Expedite service of food to ensure the guests receive their order in a prompt and efficient manner.
  9. Maintain communication between kitchen and restaurant staff to keep flow of food orders running smoothly.
  10. Stock kitchen areas with flatware and china.
  11. Assist servers as needed.
  12. Help keep the restaurant a safe working environment for guests as well as employees.
  13. Provide a clean, neat, and groomed representation of company while in company uniform.
  14. Successfully complete other duties as assigned.
Steward

  2. Establish and maintain a high standard of cleanliness and sanitation in all food service outlets in the hotel.
  3. Perform routine maintenance and cleaning on dish room equipment to include but not limited to carts, and fixtures in assigned areas in accordance with Department S.O.P.s and work practices.
  4. Attend and participate in all appropriate and/or mandatory meetings and on-going training sessions.
  5. Inspect and evaluate physical condition of equiptment daily for cleanliness. Report any necessary repairs to your immediate supervisor.
  6. Compliance with company policies to include: following daily and weekly cleaning checklists and documented standards of cleanliness and orginization.
  7. Maintain a high level of the sanitation and safety standards through weekly inspections
  8. Possess full knowledge of all matters relating to proper cleaning techniques.
  9. Efficient coordination of distribution of all supplies and equipment to all food and beverage outlets.
  10. Perform special cleaning projects as assigned.
Line Cook

  2. Associate Responsibilities specific for this role and Department:


    1.Will be responsible for working the fry, pantry and salad stations.

    2.Must be able to produce and plate salads/pantry and fried items.

    3.Prepare food of consistent quality following recipe cards and production and portion standards.

    4.Start food items that are prepared ahead of time, making sure not to prepare over estimated needs.

    5.Date all food containers and rotate as per the SOP, making sure that all perishables are kept at proper temperatures.

    6.Check pars for shift use, execute necessary preparation, freezer pull and line set up. Communicate any out-of stock items or possible shortages.

    7.Assist in setting up and stocking of buffet.

    8.Return all food items not used on next shift to designated storage areas, being sure to cover/date all perishables.

    9.Assist in prep work of vegetables and condiments as required for the next shift.

    10.Maintain food & cleanliness standards to ensure that the highest quality products are consistently maintained.

    11.Perform routine maintenance & cleaning on line equipment.

    12.Manage time & station productivity according to the volume of business in assigned stations.

    13.Effectively set-up & produce a quality product from all stations in a manner adhering to health department & company standards.

    14.Can work in high stress & fast paced environment.

    15.Functions safely & efficiently under extreme kitchen heat conditions.

Server

    • Make specific suggestions of menu items, beverages while demonstrating the ability to up-sell
    • Perform procedures for the ordering process from the initial greeting to the check presentation in accordance with the timing standards set forth by the company.
    • Abide by all State, Federal and Corporate liquor regulations & alcohol awareness pertaining to service of alcoholic beverages.
    • Provide Guest Service using a tray to carry the properly plated food items & properly garnished drinks.
    • Anticipate guest needs, such as replenishing beverages & condiments.
    • Maintain accurate bank & act as own cashier as needed while adhering to all company cash handling procedures.
    • Maintain station cleanliness & organization throughout shift.
    • Complete all assigned opening, running, & closing side work.

Level Two

  1. Servers that have been "graduated" based on sales, completion of sidework checklists and over all team attitude demonstrated on a daily basis.

  10. Reset tables in a quick & efficient manner to reduce turn-around time of tables.
  11. Maintain cleanliness of chemical closet, brooms, dustpans, & mops.
  12. Assist servers as needed.
  13. Help keep the restaurant a safe working environment for guests as well as associates.
  14. Successfully complete other duties as assigned.
